Recipe: Chicken Biscuits

A dinner solution when you don't know what's for dinner!

Have you ever had one of those nights? The family is ready for dinner and as you gaze into the refrigerator, all you see is a collection of random ingredients that you're not even sure will make a meal! 

This easy recipe takes advantage of all that randomness that may be in your fridge right now and turns it into a delicious and family-friendly meal. 

Ingredients
  • 1 can of buttermilk biscuits
  • ½ cup cooked chicken, shredded or diced 
  • 1 tablespoon ranch dressing
  • Shredded cheese (or cheese slices if that's all you have on hand!)
  • 2 tablespoons melted butter
  • Italian bread crumbs (optional)
Directions
  1. Preheat the oven to 350 degrees
  2. Grease a baking sheet
  3. Lay out the buttermilk biscuits and roll slightly to flatten and make a larger circle
  4. In a medium bowl, combine the chicken and ranch dressing
  5. Spoon a bit of the chicken mixture onto ½ the biscuits
  6. Top with cheese
  7. Place an empty biscuit on top, pressing the top and bottom edges of the two biscuits together
  8. Brush the tops of the biscuits with melted butter
  9. Sprinkle Italian bread crumbs on top
  10. Bake for 10-12 minutes until golden brown
Add a side salad or fruit and enjoy!

One of the best things about this recipe is the opportunity for variations to make it uniquely yours and tailored to your family's tastes.

Some suggestions:
  • Use another favorite dressing, cream cheese, or mayo in place of the ranch dressing.
  • Use different combinations of cheese, such as shredded, sliced, cubed or even cut up cheese sticks.
  • Use plain bread crumbs with Italian seasoning, garlic salt or seasoned salt, or leave the tops plain.
  • Substitute chicken nuggets from your freezer or pre-made chicken strips for the cooked chicken. You could even use other meats like diced ham or pepperoni for even more variety.
